I am Maria, I’m 26 and I am an evolutionary biologist with the passion for insects’ world; and I talk about “world” thinking of the incredible variety of ecological niches that insects can colonize.
At the beginning, I got interested into the use of insects as food and feed because of their key potential in terms of ecosustainability. Then, I moved to Mexico to study entomophagy; there, I deepened and experienced other aspects about the theme of eating insects, including tasting and sensorial factors, as well as psychological and social, nutritional, economic, political and legislative.
So, entomophagy represents a very complex and multidisciplinary field, and the magazine L’entomofago is one of the few reliable and clear ways to be informed on such topic. I’m happy to contribute with the same adequacy and enthusiasm to the debate on such an important and current theme.
